Beet Green Citrus Hemp Seed Salad with Citrus Dressing
The next classic salad.

For the salad
  1. 6 oz. Organic Beet Greens
  2. 6 oz. Organic Boston lettuce
  3. 2 small organic raw beets
  4. 3 medium organic sweet carrots
  5. 1 pint kumquats
For the dressing
  1. 2 Organic Oranges
  2. 1/4 cup Champagne vinegar or White wine vinegar
  3. Almond oil or other light oil for salad
  4. Agave
  5. Himalayan salt
  6. Hemp Seeds for garnish and nutrition.
  1. Wash beets and remove beet greens. Select the best leaves from the beet stalks. Cut beet greens to bite size pieces. Wash and separate the Boston lettuce. Wash and peel the beets. Cut beets into matchsticks or grate with large grater. Wash and peel carrots. Cut carrots into matchsticks or use a large grater. Wash kumquats and cut into halves lengthwise.
  2. Wash and cut oranges in half. Squeeze the juice from both oranges add the vinegar and whisk together with agave (as desired) and oil.
  3. Toss all ingredients together and drizzle dressing before serving.
  4. Serve with a sprinkle of salt. (optional).
  5. Add Hemp seeds as desired. (optional).
  1. Use a nice clear vinegar of your choice and also a good quality light, clear oil of your choice.
  2. Heavy or dark vinegar or oils are not recommended for this salad.

Summer Tomato Salad

  1. 5 medium organic tomatoes
  2. 3 medium organic green peppers
  3. 1 small organic red onion
  4. 1 large organic lemon
  5. 1/4 cup organic olive oil (the better the quality the better the taste).
  6. Himalayan salt (optional)
  7. Pepper (optional)
  1. Wash tomatoes, peppers and lemon.
  2. Cut tomatoes into wedges, cut peppers into strips and cut red onion small wedges.
  3. Toss all tomatoes, peppers and onions lightly in bowl.
  4. Squeeze lemon juice and drizzle olive oil. Toss lightly again.
  5. Serve in small plates or bowls sprinkle with Himalayan salt and cracked pepper if desired.
  1. If you do not have lemon a good quality vinegar will do. or You can add both in equal parts.

Simple Salad
Organic crunchy cucumber radish salad.

  1. Three large organic cucumbers
  2. 2 cups fresh organic radishes
  3. 2 limes (or lemons if you prefer)
  4. Himalayan salt
  5. Cayenne powder (Optional)
  1. Scrub and wash cucumbers in cold running water.
  2. Scrub and wash radishes in cold running water.
  3. Scrub and wash limes or lemons in cold running water.
  4. Slice cucumbers (thick or thin your choice).
  5. Slice radishes (thick or thin your choice).
  6. Cut limes or lemons in half.
  7. Arrange radishes in center of platter or plates.
  8. Arrange cucumbers around radishes.
  9. Squeeze lime juice over salad and sprinkle with Himalayan salt and cayenne powder if desired.
  10. Enjoy.
  1. You can chill all ingredients after washing if you like your salad chilled.
